This recipe was very easy to convert to gluten-free. I put my changes in parentheses. Check out my pinterest page, copy and paste:
Banana Banana Bread (gluten-free recipe)
2 cup all-purpose flour (1/2 c. almond flour, 1/4 c. potato flour, 1/4 c. corn flour)
1 tsp. baking soda
1⁄4 tsp. salt
1⁄2 cup butter
3⁄4 cup brown sugar
2 egg, beaten
2 1⁄3 cup overripe bananas, mashed
( I also added 1/4 c. chia seed, 1/4 c. homemade peach butter but you could substitute applesauce too)
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 x 5 inch loaf pan. ( I baked mine in 4 small bread pans. I think this help them cook even and all the way through. Lightly grease with coconut oil. )
- In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture just enough to moisten. Pour batter into prepared loaf pan.
- Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into the center comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
