Cooking my favorite hobby/weakness

Yesterday, I started cooking at noon and wasn’t finished until 5pm. My kitchen was a mess, the dogs  were waiting to go for a walk and the kitten fell asleep, but I had a great time. Sometimes, I don’t cook just because I don’t want the messy clean up afterwards. That is the truth but… I love to cook.

I have been on a gluten free diet since January 1st this year (2012) and at first I thought it was going to be hard to do but, turns out with just a little effort its easy! I have relearned how to bake. Using different types of flour, and learning to substitute gluten free foods for the usual gluten filled items in my old diet. I won’t go into my whole diet routine during this blog but, I will in the near future.

As for my health, I feel it is improving. The reason for my gluten free diet experiment was and is my thyroid problem. I guess you could say I am my own guinea pig in my experiment. I really should have been documenting it all but, I have not felt good enough until now.

Here are a few things that I have changed in my normal eating habits.

I tried to eat the basics, for example; fresh fruits and vegetables, unprocessed meats and cheeses. I exchanged butter and regular oils for coconut oil, sesame oil and avocado oil. I added more beans and rice and for breakfast every morning; cottage cheese with a fresh fruit of my choice. Sometimes, I added frozen blueberries if I was out of fresh. Adding avocados to my diet was hard at first because I have never ate them before but, I knew they were good for me.

I started taking a few supplements and because I have dealt with mild depression since the birth of my first child, I decided to take a vitamin D supplement; a naturopathy doctor recommended Green Pasture Blue Ice Fermented Cod Liver Oil, I take two 500mg tablets daily. This has helped especially in the winter with SAD. I also started taking L- Tyrosine; two 500mg tablets daily, one with lunch and one with dinner (I seen this one on the Dr.Oz show). Currently I am only taking one 500mgs of L-Tyrosine daily. Occasionally when I am eating a heavy meal I will take a plant enzymes capsule(375mg) before I eat, this is for digestive support.

(Please consult your doctor before you decide to take any supplements because, you just never know if something will interact with drugs already prescribed.)

Tonight I think I will get the leftovers out of the fridge. We have leftover taco meat (no MSG), fried summer squash(fried in sesame oil), homemade re-fried beans(gluten free), and BBQ chicken wings. I also cleaned some fresh green beans yesterday and didn’t have time to cook them so I will fry them tonight. Kinda like having a pot luck dinner! Yum!

Good evening to all, Connie in Ohio
